  • 3 cups sliced zucchini
  • 1 tbs vegetable oil
  • 4 quartered tomatoes (or 1-16 ounce can tomatoes, drained)
  • 1 tbs flour
  • 1 tsp onion salt
  • 1-10 ounce package frozen french fries, thawed
  • 4 thick slices medium cheddar cheese

Saute zucchini in oil for 5 minutes. Add tomatoes; saute until well heated. Sprinkle with flour and onion salt; spoon into shallow oiled casserole. Cover with thawed  potatoes and bake at 350º for 20 minutes. Top with cheddar cheese slices and bake 10 more minutes. Serves 4.
